Ingredients

  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1 egg yolk
  • 2 cups pastry cream (store-bought or homemade)
  • 1 cup mixed fresh fruits (strawberries, blueberries, kiwi, etc.)
  • 1/4 cup apricot jam (for glaze)
  • Mint leaves (for garnish, optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine flour and powdered sugar.
  3. Add softened butter and egg yolk to the mixture, then mix until it forms a dough.
  4. Press the dough into a mini tart pan or muffin tin to form tart shells.
  5. Bake for 15-20 minutes or until golden brown. Let cool completely.
  6. Fill each tart shell with pastry cream.
  7. Top with mixed fresh fruits of your choice.
  8. Heat the apricot jam in a small saucepan until it becomes liquid, then brush over the fruit for a glaze.
  9. Garnish with mint leaves if desired. Serve immediately or refrigerate until ready to serve.
