- 1 cup all-purpose flour
- 1/4 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 1 egg yolk
- 2 cups pastry cream (store-bought or homemade)
- 1 cup mixed fresh fruits (strawberries, blueberries, kiwi, etc.)
- 1/4 cup apricot jam (for glaze)
- Mint leaves (for garnish, optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine flour and powdered sugar.
- Add softened butter and egg yolk to the mixture, then mix until it forms a dough.
- Press the dough into a mini tart pan or muffin tin to form tart shells.
- Bake for 15-20 minutes or until golden brown. Let cool completely.
- Fill each tart shell with pastry cream.
- Top with mixed fresh fruits of your choice.
- Heat the apricot jam in a small saucepan until it becomes liquid, then brush over the fruit for a glaze.
- Garnish with mint leaves if desired. Serve immediately or refrigerate until ready to serve.
