Ingredients

- 2 cups of coleslaw mix
- 1 cup of mayonnaise
- 2 tablespoons of apple cider vinegar
- 1 tablespoon of sugar
- Salt and pepper to taste
- 4 ears of corn, husked
- 1/4 cup of butter, melted
- 1 teaspoon of garlic powder
- 1 teaspoon of paprika
- 1/2 cup of diced tomatoes
- 1/4 cup of chopped fresh cilantro
Instructions
- In a large bowl, combine coleslaw mix, mayonnaise, apple cider vinegar, sugar, salt, and pepper. Mix until well combined and refrigerate for at least 30 minutes.
- Preheat your grill to medium-high heat.
- Brush the corn with melted butter and sprinkle with garlic powder and paprika.
- Grill the corn for about 10-15 minutes, turning occasionally until charred and tender.
- Once grilled, remove corn from the grill and let cool slightly. Cut the kernels off the cob and add to a bowl.
- Mix in diced tomatoes and chopped cilantro with the corn.
- Serve coleslaw and corn salad together as perfect side dishes for your BBQ.
Notes
- Feel free to add any other vegetables you like to the corn salad.
- You can prepare the coleslaw a day in advance for better flavor.
