Ingredients

  • 1 cup of mayonnaise

  • 1 tablespoon of sugar
  • Salt and pepper to taste
  • 4 ears of corn, husked
  • 1/4 cup of butter, melted
  • 1 teaspoon of garlic powder
  • 1 teaspoon of paprika
  • 1/2 cup of diced tomatoes
  • 1/4 cup of chopped fresh cilantro

Instructions

  1. In a large bowl, combine coleslaw mix, mayonnaise, apple cider vinegar, sugar, salt, and pepper. Mix until well combined and refrigerate for at least 30 minutes.
  2. Preheat your grill to medium-high heat.
  3. Brush the corn with melted butter and sprinkle with garlic powder and paprika.
  4. Grill the corn for about 10-15 minutes, turning occasionally until charred and tender.
  5. Once grilled, remove corn from the grill and let cool slightly. Cut the kernels off the cob and add to a bowl.
  6. Mix in diced tomatoes and chopped cilantro with the corn.
  7. Serve coleslaw and corn salad together as perfect side dishes for your BBQ.

Notes
