Ingredients

  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup bell peppers, diced
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 cup shredded cheddar cheese
  • 1 cup cauliflower rice
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat. Add the diced onion and garlic, and sauté until soft.
  3. Add the ground beef to the skillet and cook until browned. Drain excess fat if necessary.
  4. Stir in bell peppers, diced tomatoes, cauliflower rice, Italian seasoning, salt, and pepper. Cook for an additional 5 minutes.
  5. Transfer the mixture to a baking dish and top with shredded cheddar cheese.
  6. Bake in the preheated oven for 20-25 minutes or until the cheese is melted and bubbly.
  7. Let it cool for a few minutes before serving.
