A delicious and filling low carb casserole made with ground beef, cheese, and vegetables.
Ingredients

- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup bell peppers, diced
- 1 can (14.5 oz) diced tomatoes, drained
- 1 cup shredded cheddar cheese
- 1 cup cauliflower rice
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, heat olive oil over medium heat. Add the diced onion and garlic, and sauté until soft.
- Add the ground beef to the skillet and cook until browned. Drain excess fat if necessary.
- Stir in bell peppers, diced tomatoes, cauliflower rice, Italian seasoning, salt, and pepper. Cook for an additional 5 minutes.
- Transfer the mixture to a baking dish and top with shredded cheddar cheese.
- Bake in the preheated oven for 20-25 minutes or until the cheese is melted and bubbly.
- Let it cool for a few minutes before serving.
