A rich and creamy lobster bisque that’s perfect for any occasion.
Ingredients

- 2 lobster tails
- 4 cups seafood stock
- 1 cup heavy cream
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1/4 cup tomato paste
- 1/4 cup brandy
- 1 teaspoon thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
- Chopped chives for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add onions, carrots, and celery. Sauté until softened, about 5 minutes.
- Add garlic and cook for another minute until fragrant.
- Stir in tomato paste, brandy, and thyme. Cook for 2 minutes.
- Pour in seafood stock and bring to a simmer. Allow to cook for 15 minutes.
- Meanwhile, cook lobster tails in boiling water for 5-6 minutes until cooked through. Remove meat and chop into bite-sized pieces.
- Add the lobster meat to the pot and stir in the heavy cream. Simmer for another 5 minutes.
- Season with salt and pepper to taste.
- Serve hot, garnished with chopped chives.
Notes
- For a smoother bisque, blend the soup with an immersion blender before adding the lobster meat.
- This bisque can be made ahead of time and reheated gently on the stove.
