A rich and creamy lobster bisque that’s perfect for any occasion.


Ingredients

  • 2 lobster tails
  • 4 cups seafood stock
  • 1 cup heavy cream
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1/4 cup tomato paste
  • 1/4 cup brandy
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Chopped chives for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions, carrots, and celery. Sauté until softened, about 5 minutes.
  2. Add garlic and cook for another minute until fragrant.
  3. Stir in tomato paste, brandy, and thyme. Cook for 2 minutes.
  4. Pour in seafood stock and bring to a simmer. Allow to cook for 15 minutes.
  5. Meanwhile, cook lobster tails in boiling water for 5-6 minutes until cooked through. Remove meat and chop into bite-sized pieces.
  6. Add the lobster meat to the pot and stir in the heavy cream. Simmer for another 5 minutes.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with chopped chives.

Notes

  • For a smoother bisque, blend the soup with an immersion blender before adding the lobster meat.
  • This bisque can be made ahead of time and reheated gently on the stove.
