  • 1 cup black beans, rinsed and drained
  • 1 cup corn, frozen or canned
  • 1 cup shredded cheese (cheddar or a cheese blend)
  • 1 avocado, diced
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced jalapeños (optional)
  • Fresh cilantro for garnish
  • Sour cream or Greek yogurt for serving (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper.
  3. In a large bowl, toss the sweet potato rounds with olive oil, paprika, garlic powder, salt, and pepper until evenly coated.
  4. Spread the sweet potato rounds in a single layer on the prepared baking sheet.
  5. Bake for 20-25 minutes, flipping halfway through, until the sweet potatoes are crispy and golden brown.
