- 4 large russet potatoes, peeled and diced
- 1 medium onion, chopped
- 4 cups chicken broth
- 1 cup heavy cream
- 4 slices bacon, cooked and crumbled
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- Salt and pepper to taste
Instructions
- In a large pot, combine the diced potatoes and chopped onion.
- Add the chicken broth and bring to a boil. Reduce heat and let simmer until potatoes are tender, about 15-20 minutes.
- Using a potato masher, mash some of the potatoes in the soup for a thicker consistency.
- Stir in the heavy cream, crumbled bacon, cheddar cheese, and sour cream. Mix until well combined and cheese is melted.
- Season with salt and pepper to taste.
- Serve hot, topped with additional bacon, cheese, and chopped green onions.
Notes
- For a vegetarian version, substitute chicken broth with vegetable broth.
