Ingredients

  • 1/2 cup shredded cheese (cheddar or your choice)
  • 1/2 cup cooked and crumbled sausage or bacon
  • 1/4 cup diced bell peppers
  • 1/4 cup diced onions
  • 1 avocado, sliced
  • 1/4 cup salsa
  • 4 large flour tortillas
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. In a large skillet, cook the diced onions and bell peppers over medium heat until softened, about 3-4 minutes.
  2. Add the cooked sausage or bacon to the skillet and stir to combine. Cook for an additional 2 minutes.
  3. In a bowl, whisk the eggs with salt and pepper. Pour the eggs into the skillet and scramble until fully cooked.
  4. Remove the skillet from heat and stir in the shredded cheese until melted.
  5. Warm the tortillas in a separate skillet or microwave until pliable.
  6. To assemble the burritos, place an equal portion of the egg mixture in the center of each tortilla.
  7. Top with sliced avocado and salsa.
  8. Fold in the sides of the tortilla, then roll it up from the bottom to enclose the filling.
  9. Serve immediately, garnished with fresh cilantro if desired.
