- 4 large eggs
- 1/2 cup shredded cheese (cheddar or your choice)
- 1/2 cup cooked and crumbled sausage or bacon
- 1/4 cup diced bell peppers
- 1/4 cup diced onions
- 1 avocado, sliced
- 1/4 cup salsa
- 4 large flour tortillas
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- In a large skillet, cook the diced onions and bell peppers over medium heat until softened, about 3-4 minutes.
- Add the cooked sausage or bacon to the skillet and stir to combine. Cook for an additional 2 minutes.
- In a bowl, whisk the eggs with salt and pepper. Pour the eggs into the skillet and scramble until fully cooked.
- Remove the skillet from heat and stir in the shredded cheese until melted.
- Warm the tortillas in a separate skillet or microwave until pliable.
- To assemble the burritos, place an equal portion of the egg mixture in the center of each tortilla.
- Top with sliced avocado and salsa.
- Fold in the sides of the tortilla, then roll it up from the bottom to enclose the filling.
- Serve immediately, garnished with fresh cilantro if desired.

- Feel free to customize your burrito with additional toppings like jalapeños, sour cream, or hot sauce.
- You can also make these burritos ahead of time and freeze them for a quick breakfast option.
