- 4 large russet potatoes
- 1 cup shredded cheddar cheese
- 1 cup cooked and crumbled bacon
- 1/2 cup sour cream
- 1/4 cup chopped chives
- Salt and pepper to taste
- Olive oil (for rubbing)
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and scrub the potatoes thoroughly, then pat them dry.
- Prick each potato a few times with a fork, then rub them with olive oil and sprinkle with salt.
- Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until the skins are crisp and a fork easily pierces through the flesh.
- Remove the potatoes from the oven and let them cool for a few minutes.
- Once cool enough to handle, cut a slit down the center of each potato and gently squeeze the ends to open them up.
- Fluff the insides of the potatoes with a fork and season with salt and pepper.
- Top each potato with shredded cheddar cheese, crumbled bacon, sour cream, and chopped chives.
- Serve immediately and enjoy!
