Ingredients

  • 4 large russet potatoes
  • 1 cup shredded cheddar cheese
  • 1 cup cooked and crumbled bacon
  • 1/2 cup sour cream
  • 1/4 cup chopped chives
  • Salt and pepper to taste
  • Olive oil (for rubbing)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and scrub the potatoes thoroughly, then pat them dry.
  3. Prick each potato a few times with a fork, then rub them with olive oil and sprinkle with salt.
  4. Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until the skins are crisp and a fork easily pierces through the flesh.
