These lemon raspberry bars are a delightful combination of tart lemon and sweet raspberries, with a buttery shortbread crust. Perfect for a refreshing dessert!

- 1 1/2 cups All-purpose flour
- 1 cup Granulated sugar
- 1/2 cup Unsalted butter (melted)
- 1 cup Fresh raspberries
- 3 Eggs
- 1/2 cup Lemon juice (freshly squeezed)
- 1 tablespoon Zest of lemon
- 1 teaspoon Baking powder
- 1/4 teaspoon Salt
Instructions
- Preheat the oven to 350°F (175°C). Grease and line an 8×8 inch baking dish with parchment paper.
- In a mixing bowl, combine flour, 1/2 cup sugar, and melted butter. Mix until crumbly and press into the bottom of the prepared baking dish to form the crust.
- Bake the crust for 15 minutes or until lightly golden. Remove from oven and set aside to cool slightly.
- In another bowl, whisk together the eggs, remaining sugar, lemon juice, lemon zest, baking powder, and salt until well combined.
- Gently fold in the fresh raspberries into the lemon mixture.
- Pour the lemon raspberry mixture over the cooled crust and spread evenly.
- Return to the oven and bake for an additional 20-25 minutes, or until the filling is set and a toothpick comes out clean.
- Allow to cool completely in the pan before slicing into bars. Dust with powdered sugar if desired.
Notes
- For a stronger lemon flavor, increase the lemon zest.
- These bars can be stored in the refrigerator for up to 5 days.
