Description

These lemon raspberry bars are a delightful combination of tart lemon and sweet raspberries, with a buttery shortbread crust. Perfect for a refreshing dessert!


Ingredients

  • 1 1/2 cups All-purpose flour
  • 1 cup Granulated sugar
  • 1/2 cup Unsalted butter (melted)
  • 1 cup Fresh raspberries
  • 3 Eggs
  • 1/2 cup Lemon juice (freshly squeezed)
  • 1 tablespoon Zest of lemon
  • 1 teaspoon Baking powder
  • 1/4 teaspoon Salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line an 8×8 inch baking dish with parchment paper.
  2. In a mixing bowl, combine flour, 1/2 cup sugar, and melted butter. Mix until crumbly and press into the bottom of the prepared baking dish to form the crust.
  3. Bake the crust for 15 minutes or until lightly golden. Remove from oven and set aside to cool slightly.
  4. In another bowl, whisk together the eggs, remaining sugar, lemon juice, lemon zest, baking powder, and salt until well combined.
  5. Gently fold in the fresh raspberries into the lemon mixture.
  6. Pour the lemon raspberry mixture over the cooled crust and spread evenly.
  7. Return to the oven and bake for an additional 20-25 minutes, or until the filling is set and a toothpick comes out clean.
  8. Allow to cool completely in the pan before slicing into bars. Dust with powdered sugar if desired.

Notes

  • For a stronger lemon flavor, increase the lemon zest.
