- 1 cup orzo pasta
- 2 cups water or vegetable broth
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, finely chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh basil, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon lemon zest
- Salt and pepper to taste
Instructions
- In a medium saucepan, bring water or vegetable broth to a boil. Add the orzo pasta and cook according to package instructions until al dente. Drain and set aside to cool.
- In a large mixing bowl, combine the cherry tomatoes, cucumber, red onion, feta cheese, parsley, and basil.
- In a small bowl, whisk together olive oil, lemon juice, lemon zest, salt, and pepper.
- Add the cooled orzo to the vegetable and herb mixture. Pour the dressing over the salad and toss gently to combine.
- Taste and adjust seasoning if necessary. Serve chilled or at room temperature.
