Ingredients

  • 1 cup orzo pasta
  • 2 cups water or vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • Salt and pepper to taste

Instructions

  1. In a medium saucepan, bring water or vegetable broth to a boil. Add the orzo pasta and cook according to package instructions until al dente. Drain and set aside to cool.
  2. In a large mixing bowl, combine the cherry tomatoes, cucumber, red onion, feta cheese, parsley, and basil.
  3. In a small bowl, whisk together olive oil, lemon juice, lemon zest, salt, and pepper.
  4. Add the cooled orzo to the vegetable and herb mixture. Pour the dressing over the salad and toss gently to combine.
