A delicious and easy overnight French toast bake infused with fresh lemon and blueberries, perfect for breakfast or brunch.

- 1 loaf of brioche or challah bread, cut into cubes
- 2 cups fresh blueberries
- 4 large eggs
- 2 cups milk
- 1/2 cup heavy cream
- 1/2 cup granulated sugar
- 1 tablespoon lemon zest
- 1/4 cup fresh lemon juice
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- Powdered sugar for serving (optional)
- Maple syrup for serving (optional)
Instructions
- In a large bowl, whisk together the eggs, milk, heavy cream, granulated sugar, lemon zest, lemon juice, vanilla extract, cinnamon, and salt until well combined.
- Add the bread cubes to the egg mixture and gently fold to combine, making sure all the bread is coated in the mixture.
- Fold in the fresh blueberries carefully to avoid smashing them.
- Transfer the mixture to a greased 9×13 inch baking dish, spreading it evenly.
- Cover the dish with plastic wrap and refrigerate overnight, or for at least 4 hours.
- Preheat the oven to 350°F (175°C).
- Remove the plastic wrap and bake the French toast bake for 45-50 minutes, or until the top is golden brown and the center is set.
- Allow to cool slightly before serving. Dust with powdered sugar and serve with maple syrup, if desired.
Notes
- For best results, use day-old bread as it will absorb the egg mixture better.
- Feel free to substitute frozen blueberries if fresh ones are not available.
- This dish can be prepared a day in advance, making it a perfect option for busy mornings.
