  • 1 loaf of brioche or challah bread, cut into cubes
  • 2 cups fresh blueberries
  • 4 large eggs
  • 2 cups milk
  • 1/2 cup heavy cream
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon zest
  • 1/4 cup fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • Powdered sugar for serving (optional)
  • Maple syrup for serving (optional)

Instructions

  1. In a large bowl, whisk together the eggs, milk, heavy cream, granulated sugar, lemon zest, lemon juice, vanilla extract, cinnamon, and salt until well combined.
  2. Add the bread cubes to the egg mixture and gently fold to combine, making sure all the bread is coated in the mixture.
  3. Fold in the fresh blueberries carefully to avoid smashing them.
  4. Transfer the mixture to a greased 9×13 inch baking dish, spreading it evenly.
  5. Cover the dish with plastic wrap and refrigerate overnight, or for at least 4 hours.
  6. Preheat the oven to 350°F (175°C).
  7. Remove the plastic wrap and bake the French toast bake for 45-50 minutes, or until the top is golden brown and the center is set.
  8. Allow to cool slightly before serving. Dust with powdered sugar and serve with maple syrup, if desired.

Notes

  • For best results, use day-old bread as it will absorb the egg mixture better.
  • Feel free to substitute frozen blueberries if fresh ones are not available.
