Ingredients

  • 1 cup fresh blueberries
  • 1/2 cup granulated sugar
  • 1/4 cup lemon juice
  • 1 tablespoon lemon zest
  • 1/2 cup heavy cream
  • 1/2 cup Greek yogurt
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 tablespoon cornstarch
  • 1 tablespoon water

Instructions

  1. In a saucepan over medium heat, combine blueberries, 1/4 cup sugar, lemon juice, and lemon zest. Cook until blueberries burst and mixture thickens, about 5-7 minutes.
  2. In a small bowl, mix cornstarch and water to create a slurry. Add to the blueberry mixture and stir until thickened. Remove from heat and let cool.
  3. In a medium bowl, whip heavy cream with remaining sugar until soft peaks form.
  4. In another bowl, combine Greek yogurt, vanilla extract, and salt. Gently fold whipped cream into the yogurt mixture until combined.
  5. In serving glasses, layer blueberry mixture and yogurt mixture. Start with blueberries, then yogurt, and repeat until glasses are filled.
  6. Chill for at least 1 hour before serving. Garnish with extra blueberries and lemon zest if desired.

Notes

  • Feel free to substitute frozen blueberries if fresh ones are not available.
  • This dessert can be made a day in advance for easy serving.
