A refreshing and delightful lemon blueberry dessert that brings together the tartness of lemons and the sweetness of blueberries, perfect for summer gatherings.

- 1 cup fresh blueberries
- 1/2 cup granulated sugar
- 1/4 cup lemon juice
- 1 tablespoon lemon zest
- 1/2 cup heavy cream
- 1/2 cup Greek yogurt
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 tablespoon cornstarch
- 1 tablespoon water
Instructions
- In a saucepan over medium heat, combine blueberries, 1/4 cup sugar, lemon juice, and lemon zest. Cook until blueberries burst and mixture thickens, about 5-7 minutes.
- In a small bowl, mix cornstarch and water to create a slurry. Add to the blueberry mixture and stir until thickened. Remove from heat and let cool.
- In a medium bowl, whip heavy cream with remaining sugar until soft peaks form.
- In another bowl, combine Greek yogurt, vanilla extract, and salt. Gently fold whipped cream into the yogurt mixture until combined.
- In serving glasses, layer blueberry mixture and yogurt mixture. Start with blueberries, then yogurt, and repeat until glasses are filled.
- Chill for at least 1 hour before serving. Garnish with extra blueberries and lemon zest if desired.
Notes
- Feel free to substitute frozen blueberries if fresh ones are not available.
- This dessert can be made a day in advance for easy serving.
