Ingredients

  • Salt and pepper to taste
  • 2 cups cooked rice or quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1 cup lettuce, shredded
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup tzatziki sauce

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add ground lamb, garlic powder, onion powder, oregano, cumin, salt, and pepper. Cook until the lamb is browned and cooked through, about 8-10 minutes.
  3. In a bowl, layer cooked rice or quinoa, followed by the cooked lamb.
  4. Top with cherry tomatoes, cucumber, red onion, lettuce, and feta cheese.
  5. Drizzle with tzatziki sauce before serving.
