Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 4 large egg yolks
  • 1 can (14 oz) sweetened condensed milk
  • 1/2 cup fresh key lime juice
  • 1 tablespoon key lime zest
  • 1/4 teaspoon salt
  • Whipped cream, for serving
  • Lime slices, for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, mix together the graham cracker crumbs, sugar, and melted butter until well combined.
  3. Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan.
  4. Bake the crust for 8-10 minutes, or until lightly golden. Remove from the oven and let cool.
  5. In a large bowl, whisk together the egg yolks, sweetened condensed milk, key lime juice, lime zest, and salt until smooth.
  6. Pour the filling into the cooled crust and spread evenly.
  7. Bake for an additional 10-15 minutes, or until the filling is set but still slightly jiggly in the center.
  8. Remove from the oven and let cool to room temperature, then refrigerate for at least 3 hours before serving.
  9. Serve chilled with whipped cream and lime slices for garnish.

Notes

  • For a more intense lime flavor, increase the amount of lime zest.
  • If you cannot find key limes, regular limes can be substituted, but the flavor will be slightly different.
