Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken thighs dry with paper towels to remove excess moisture.
  3. In a large bowl, combine olive oil, salt, pepper, garlic powder, onion powder, paprika, thyme, and rosemary. Mix well.
  4. Add the chicken thighs to the bowl and rub the seasoning mixture all over the chicken, making sure to get it under the skin as well.
  5. Place the chicken thighs skin-side up on a baking sheet lined with parchment paper.
  6. Bake in the preheated oven for 35-40 minutes or until the internal temperature reaches 165°F (75°C) and the skin is crispy and golden brown.
  7. Remove from the oven and let the chicken rest for 5 minutes before serving.

  • For extra crispy skin, you can broil the chicken for the last 2-3 minutes of cooking.
