Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons cornstarch (optional, for thickening)
  • 2 tablespoons water (optional, for thickening)

Instructions

  1. Set the Instant Pot to ‘Sauté’ mode. Add olive oil and let it heat up.
  2. Add the chopped onion and minced garlic. Sauté until the onion is translucent.
  3. Add the beef cubes to the pot and season with salt and pepper. Sear the beef on all sides until browned.
  4. Stir in the carrots, potatoes, beef broth, Worcestershire sauce, thyme, and rosemary.
  5. Close the lid of the Instant Pot and set it to ‘Pressure Cook’ on high for 35 minutes.
  6. Once the cooking time is complete, allow the pressure to release naturally for 10 minutes, then quick release any remaining pressure.
  7. If you prefer a thicker stew, mix cornstarch with water in a small bowl and stir it into the stew. Set the Instant Pot to ‘Sauté’ mode and cook for an additional 5-10 minutes until thickened.

Notes

  • Feel free to add other vegetables like peas or green beans.
