- 2 pounds beef chuck, cut into 1-inch cubes
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 carrots, sliced
- 3 potatoes, diced
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 tablespoons cornstarch (optional, for thickening)
- 2 tablespoons water (optional, for thickening)
Instructions
- Set the Instant Pot to ‘Sauté’ mode. Add olive oil and let it heat up.
- Add the chopped onion and minced garlic. Sauté until the onion is translucent.
- Add the beef cubes to the pot and season with salt and pepper. Sear the beef on all sides until browned.
- Stir in the carrots, potatoes, beef broth, Worcestershire sauce, thyme, and rosemary.
- Close the lid of the Instant Pot and set it to ‘Pressure Cook’ on high for 35 minutes.
- Once the cooking time is complete, allow the pressure to release naturally for 10 minutes, then quick release any remaining pressure.
- If you prefer a thicker stew, mix cornstarch with water in a small bowl and stir it into the stew. Set the Instant Pot to ‘Sauté’ mode and cook for an additional 5-10 minutes until thickened.

- Feel free to add other vegetables like peas or green beans.
