- 3 pounds pork shoulder (trimmed and cut into large chunks)
- 2 tablespoons olive oil
- 1 large onion (chopped)
- 4 cloves garlic (minced)
- 1 cup BBQ sauce (plus more for serving)
- 1/4 cup apple cider vinegar
- 2 tablespoons brown sugar
- 1 tablespoon smoked paprika
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon cumin
Instructions
- Set the Instant Pot to ‘Sauté’ mode. Add olive oil and let it heat up.
- Season the pork with salt, black pepper, smoked paprika, and cumin. Once the oil is hot, add the pork in batches and brown on all sides, about 3-4 minutes per side. Remove and set aside.
- Add chopped onion and minced garlic to the pot. Sauté for 2-3 minutes until soft and fragrant.
- Stir in apple cider vinegar, scraping the bottom of the pot to deglaze.
- Return the browned pork to the pot. Add BBQ sauce and brown sugar. Stir to combine.
- Seal the Instant Pot lid and set to ‘Manual’ or ‘Pressure Cook’ on high for 60 minutes.
- Once the cooking time is complete, allow for a natural pressure release for about 15 minutes, then quick release any remaining pressure.
- Remove the pork from the pot and shred using two forks.
- Return the shredded pork to the pot, stirring to coat with the sauce. Serve with additional BBQ sauce if desired.
Notes
- For extra flavor, marinate the pork overnight in the seasoning and BBQ sauce before cooking.
- Serve on sandwich buns, in tacos, or over rice for a delicious meal.
