Ingredients

  • 3 pounds pork shoulder (trimmed and cut into large chunks)
  • 2 tablespoons olive oil
  • 1 large onion (chopped)
  • 4 cloves garlic (minced)
  • 1 cup BBQ sauce (plus more for serving)
  • 1/4 cup apple cider vinegar
  • 2 tablespoons brown sugar
  • 1 tablespoon smoked paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon cumin

Instructions

  1. Set the Instant Pot to ‘Sauté’ mode. Add olive oil and let it heat up.
  2. Season the pork with salt, black pepper, smoked paprika, and cumin. Once the oil is hot, add the pork in batches and brown on all sides, about 3-4 minutes per side. Remove and set aside.
  3. Add chopped onion and minced garlic to the pot. Sauté for 2-3 minutes until soft and fragrant.
  4. Stir in apple cider vinegar, scraping the bottom of the pot to deglaze.
  5. Return the browned pork to the pot. Add BBQ sauce and brown sugar. Stir to combine.
  6. Seal the Instant Pot lid and set to ‘Manual’ or ‘Pressure Cook’ on high for 60 minutes.
  7. Once the cooking time is complete, allow for a natural pressure release for about 15 minutes, then quick release any remaining pressure.
  8. Remove the pork from the pot and shred using two forks.
  9. Return the shredded pork to the pot, stirring to coat with the sauce. Serve with additional BBQ sauce if desired.

Notes

  • For extra flavor, marinate the pork overnight in the seasoning and BBQ sauce before cooking.
