Instructions

  2. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is cooked and the liquid is absorbed.
  3. In a large bowl, combine the cooked quinoa, black beans, corn, red bell pepper, and cilantro.
  4. In a small bowl, whisk together lime juice, salt, pepper, cumin, and chili powder.
  5. Pour the dressing over the quinoa mixture and toss to combine.
  6. Top with diced avocado before serving.
