- 1 cup quinoa
- 2 cups vegetable broth
- 1 cup chickpeas, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water and drain.
- In a saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce heat to low and cover. Cook for 15 minutes or until quinoa is fluffy.
- In a large bowl, combine chickpeas, cherry tomatoes, cucumber, bell pepper, red onion, and parsley.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Once quinoa is cooked, let it cool slightly, then add it to the vegetable mixture.
- Pour the dressing over the salad and toss to combine.
- Serve chilled or at room temperature.
