- Butter or oil for cooking

Instructions
- In a bowl, mix together the ricotta cheese, honey, vanilla extract, and ground cinnamon until well combined.
- Spread the ricotta mixture evenly on two slices of bread, then top with the other two slices to make sandwiches.
- In another bowl, whisk together the eggs and milk until smooth.
- Heat a skillet or griddle over medium heat and add a bit of butter or oil.
- Dip each sandwich into the egg mixture, allowing it to soak for a few seconds on each side.
- Place the soaked sandwiches in the hot skillet and cook until golden brown on both sides, about 3-4 minutes per side.
