Description

This Homemade Pumpkin Spice Granola is a delightful and nutritious snack that captures the essence of fall, perfect for cozy autumn mornings or as a topping for yogurt.

Ingredients

Scale
  • 2 cups rolled oats
  • 1 cup nuts (e.g., pecans or walnuts)
  • 1/2 cup pumpkin seeds
  • 1/2 cup maple syrup or honey
  • 1/4 cup coconut oil
  • 1/4 cup nut butter
  • 2 teaspoons pumpkin spice
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the rolled oats, nuts, pumpkin seeds, pumpkin spice, and salt.
  3. In a small saucepan, melt the coconut oil and nut butter together over low heat.
  4. Remove the saucepan from heat and stir in the maple syrup or honey until well combined.
  5. Pour the wet mixture over the dry ingredients and mix until everything is evenly coated.
  6. Spread the granola mixture onto a baking sheet lined with parchment paper.
  7. Press the granola down firmly in the baking pan to encourage clumps to form during baking.
  8. Bake in the preheated oven for 20-25 minutes, stirring halfway through for even baking.
  9. Remove from the oven and let it cool completely on the baking sheet.
  10. Once cooled, break the granola into clusters and store in an airtight container.
