- 1/2 teaspoon baking soda
- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 cup packed brown sugar
- 1 teaspoon salt
- 2 teaspoons vanilla extract
- 2 large eggs
- 2 cups chocolate chips
- 1 cup colorful sprinkles (optional)
- Royal icing for decoration (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, whisk together the flour and baking soda; set aside.
- In a large bowl, using a hand mixer or stand mixer, cream together the softened butter, granulated sugar, brown sugar, and salt until light and fluffy.
- Add the vanilla extract and eggs, one at a time, mixing well after each addition.
- Gradually add the flour mixture to the wet ingredients and mix until just combined.
- Fold in the chocolate chips and sprinkles, if using.
- Drop rounded tablespoons of dough onto ungreased baking sheets, leaving space between each cookie.
- Bake for 10-12 minutes or until the edges are golden brown. The centers may look slightly underbaked.
- Remove from the oven and let cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.
- Once cooled, decorate with royal icing if desired.
Notes
- For a themed graduation cookie, use colored sprinkles that match the school colors.
- You can also use cookie cutters to create fun shapes, such as caps or diplomas.
