Ingredients

- 1 lb shrimp, peeled and deveined
- 1 lb fish fillets, cut into chunks
- 4 cups vegetable broth
- 1 can diced tomatoes (14 oz)
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, diced
- 1 tsp thyme
- 1 tsp paprika
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, carrots, and celery. Sauté until soft.
- Stir in diced tomatoes, vegetable broth, thyme, paprika, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- Add shrimp and fish. Cook until seafood is opaque.
- Garnish with fresh parsley before serving.
