  • 2 cups mixed bell peppers, sliced
  • 1 cup broccoli florets
  • 1 cup carrots, julienned
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 3 tablespoons soy sauce (low sodium)
  • 1 tablespoon olive oil
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • Cooked brown rice or quinoa for serving
  • Sesame seeds for garnish (optional)

Instructions

  1. In a large skillet or wok, heat olive oil over medium-high heat.
  2. Add minced garlic and ginger, sauté for 1-2 minutes until fragrant.
  3. Add ground beef to the skillet, breaking it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes.
  4. Stir in bell peppers, broccoli, and carrots. Cook for an additional 5-7 minutes until vegetables are tender but still crisp.
  5. Pour in soy sauce and sesame oil, stirring to combine. Season with salt and pepper to taste.
