- 2 cups mixed bell peppers, sliced
- 1 cup broccoli florets
- 1 cup carrots, julienned
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 3 tablespoons soy sauce (low sodium)
- 1 tablespoon olive oil
- 1 teaspoon sesame oil
- Salt and pepper to taste
- Cooked brown rice or quinoa for serving
- Sesame seeds for garnish (optional)
Instructions
- In a large skillet or wok, heat olive oil over medium-high heat.
- Add minced garlic and ginger, sauté for 1-2 minutes until fragrant.
- Add ground beef to the skillet, breaking it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes.
- Stir in bell peppers, broccoli, and carrots. Cook for an additional 5-7 minutes until vegetables are tender but still crisp.
- Pour in soy sauce and sesame oil, stirring to combine. Season with salt and pepper to taste.
- Serve hot over cooked brown rice or quinoa, garnished with sesame seeds if desired.
