- 1 cup quinoa
- 2 cups vegetable broth
- 1 cup cherry tomatoes, halved
- 1 cup spinach, chopped
- 1/2 cup feta cheese, crumbled

Instructions
- Rinse quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat and cover. Simmer for 15 minutes.
- Add cherry tomatoes and spinach. Cook for another 5 minutes.
- Stir in feta cheese and olive oil.
- Season with salt and pepper.
- Serve warm.
