Ingredients

- 2 tablespoons olive oil
- 1 onion, diced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 1 can diced tomatoes
- 4 cups vegetable broth
- 1 cup lentils, rinsed
- 2 cups spinach
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Sauté for 5 minutes.
- Add garlic and cook for another minute.
- Stir in diced tomatoes, vegetable broth, and lentils.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Add spinach, thyme, rosemary, salt, and pepper. Cook for 5 more minutes.
- Serve hot.
Notes
- Store leftovers in the refrigerator for up to 3 days.
- This soup freezes well.
