Ingredients

  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 1 cup lentils, rinsed
  • 2 cups spinach
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Sauté for 5 minutes.
  3. Add garlic and cook for another minute.
  4. Stir in diced tomatoes, vegetable broth, and lentils.
  5. Bring to a boil, then reduce heat and simmer for 30 minutes.
  6. Add spinach, thyme, rosemary, salt, and pepper. Cook for 5 more minutes.
  7. Serve hot.
