- 2 cups mixed bell peppers, sliced
- 1 cup broccoli florets

- 1 teaspoon ginger, minced
- Salt and pepper to taste
- Cooked brown rice or quinoa (for serving)
Instructions
- In a large skillet, heat olive oil over medium-high heat.
- Add the ground beef and cook until browned, breaking it apart with a spatula.
- Add the onion and garlic to the skillet, cooking until the onion is translucent.
- Stir in the mixed bell peppers and broccoli, cooking for an additional 5-7 minutes until the vegetables are tender-crisp.
- Add soy sauce and ginger, stirring to combine. Season with salt and pepper to taste.
- Serve over cooked brown rice or quinoa.
