Ingredients

- 2 cups of quinoa
- 1 tablespoon olive oil
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/4 cup fresh parsley, chopped
- 1 lemon, juiced
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water.
- Cook the quinoa according to package instructions.
- In a large bowl, mix cooked quinoa with olive oil, cherry tomatoes, cucumber, bell pepper, and parsley.
- Add lemon juice and season with salt and pepper.
- Toss everything together until well combined.
- Serve chilled or at room temperature.
Notes
- Quinoa can be cooked ahead of time.
- Feel free to add any other vegetables you like.
- This dish can be stored in the refrigerator for up to 3 days.
