Ingredients

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa and water. Bring to a boil.
  3. Reduce heat and simmer for 15 minutes until water is absorbed.
  4. Fluff quinoa with a fork and let cool.
  5. In a large bowl, combine quinoa, tomatoes, cucumber, and bell pepper.
  6. In a small bowl, whisk olive oil, lemon juice, salt, and pepper.
  7. Pour dressing over the salad and toss to combine.
  8. Serve immediately or chill before serving.
