Description
This healthy crockpot meal is packed with lean protein and fresh vegetables, making it a nutritious choice for dinner. Simply toss everything in the crockpot and let it do the work for you!

- 1 lb (450g) boneless, skinless chicken breasts
- 2 cups (300g) chopped carrots
- 2 cups (300g) chopped broccoli
- 1 cup (150g) chopped bell peppers
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 cup (240ml) low-sodium chicken broth
- 1 tsp dried thyme
- 1 tsp dried basil
- Salt and pepper to taste
Instructions
- Place the chicken breasts at the bottom of the crockpot.
- Add the chopped carrots, broccoli, bell peppers, onion, and garlic on top of the chicken.
- Pour the chicken broth over the vegetables and chicken.
- Sprinkle thyme, basil, salt, and pepper over the top.
- Cover and cook on low for 6-7 hours or high for 3-4 hours until the chicken is cooked through and vegetables are tender.
- Once done, shred the chicken with two forks and stir everything together before serving.
Notes
- Feel free to add other vegetables like zucchini or green beans based on your preference.
- Serve over brown rice or quinoa for a complete meal.
