A delicious and creamy coconut dessert that combines the flavors of Hawaii in a delightful pie. Haupia, a traditional Hawaiian coconut milk pudding, forms the base of this dreamy dessert, topped with a light whipped cream and a graham cracker crust.

- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 1 can (13.5 oz) coconut milk
- 1 cup whole milk
- 1/2 cup granulated sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 2 tablespoons powdered sugar
- Toasted coconut flakes for garnish (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until well combined.
- Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish. Bake for 8-10 minutes until lightly golden. Remove from oven and let cool.
- In a medium saucepan, whisk together coconut milk, whole milk, sugar, cornstarch, and salt over medium heat. Cook, stirring constantly, until the mixture thickens and comes to a gentle boil, about 5-7 minutes.
- Remove from heat and stir in vanilla extract. Pour the coconut mixture into the cooled graham cracker crust and spread evenly. Refrigerate for at least 2 hours or until set.
- In a separate bowl, whip heavy cream and powdered sugar until soft peaks form. Spread over the cooled haupia filling.
- Garnish with toasted coconut flakes if desired. Slice and serve chilled.
Notes
- For a richer flavor, use full-fat coconut milk.
- This pie can be made a day in advance and stored in the refrigerator.
