- 2 medium, diced Sweet potatoes
- 1, chopped Onion
- 3 cloves, minced Garlic
- 1, chopped Bell pepper
- 2 tablespoons Olive oil
- 1 teaspoon Cumin
- 1 teaspoon Paprika
- to taste Salt
- to taste Black pepper
- for garnish Green onions
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add chopped onion and garlic, sauté until fragrant.
- Add ground beef, breaking it up with a spatula, and cook until browned.
- Stir in diced sweet potatoes and bell pepper, cooking for about 5 minutes.
- Season with cumin, paprika, salt, and black pepper.
- Cover the skillet and cook for an additional 10-15 minutes, stirring occasionally until sweet potatoes are tender.
- Serve hot, garnished with green onions.
