  • 4 cups beef broth
  • 1 cup water
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 cups mixed vegetables (frozen or fresh)
  • 1 cup elbow macaroni (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, brown the ground beef over medium heat until fully cooked. Drain excess fat.
  2. Add the chopped onion, carrots, and celery. Sauté until the vegetables are tender, about 5-7 minutes.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the diced tomatoes, beef broth, water, oregano, basil, salt, and pepper. Bring to a boil.
  5. Reduce heat to low and let simmer for 20 minutes.
  6. If using, add the mixed vegetables and elbow macaroni. Cook for an additional 10-12 minutes, or until the pasta is tender.
  7. Taste and adjust seasoning if necessary.
  8. Serve hot, garnished with fresh parsley.
