- 1 pound ground beef
- 1 medium onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 4 cups beef broth
- 1 cup water
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 2 cups mixed vegetables (frozen or fresh)
- 1 cup elbow macaroni (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot, brown the ground beef over medium heat until fully cooked. Drain excess fat.
- Add the chopped onion, carrots, and celery. Sauté until the vegetables are tender, about 5-7 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the diced tomatoes, beef broth, water, oregano, basil, salt, and pepper. Bring to a boil.
- Reduce heat to low and let simmer for 20 minutes.
- If using, add the mixed vegetables and elbow macaroni. Cook for an additional 10-12 minutes, or until the pasta is tender.
- Taste and adjust seasoning if necessary.
- Serve hot, garnished with fresh parsley.
