  • 1 teaspoon cumin

  • 1/2 teaspoon black pepper
  • 8 corn tortillas
  • 2 cups enchilada sauce
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/4 cup chopped fresh cilantro (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  3. Add the chopped onion and minced garlic to the skillet. Cook until the onion is translucent.
  4. Stir in chili powder, cumin, salt, and black pepper. Cook for another 2-3 minutes.
  5. Warm the corn tortillas in a microwave for about 30 seconds to make them pliable.
  6. Spoon about 1/4 cup of the beef mixture onto each tortilla, roll them up, and place them seam-side down in a baking dish.
  7. Pour the enchilada sauce over the rolled tortillas, then sprinkle the shredded cheese on top.
  8. Bake in the preheated oven for 20 minutes, or until the cheese is bubbly and golden.
  9. Remove from the oven and garnish with chopped cilantro before serving.
