- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon salt

- 8 corn tortillas
- 2 cups enchilada sauce
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/4 cup chopped fresh cilantro (for garnish)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat.
- Add the chopped onion and minced garlic to the skillet. Cook until the onion is translucent.
- Stir in chili powder, cumin, salt, and black pepper. Cook for another 2-3 minutes.
- Warm the corn tortillas in a microwave for about 30 seconds to make them pliable.
- Spoon about 1/4 cup of the beef mixture onto each tortilla, roll them up, and place them seam-side down in a baking dish.
- Pour the enchilada sauce over the rolled tortillas, then sprinkle the shredded cheese on top.
- Bake in the preheated oven for 20 minutes, or until the cheese is bubbly and golden.
- Remove from the oven and garnish with chopped cilantro before serving.
Notes
- You can customize the filling by adding beans, corn, or bell peppers.
- For extra spice, add jalapeños to the beef mixture or use a spicy enchilada sauce.
- Serve with sour cream or guacamole on the side.
