  • Author: ushinzomr
  • Yield: 4 servings 1x

Description

These Grilled Watermelon Feta Skewers are a refreshing summer appetizer that combines juicy watermelon with salty feta cheese, grilled to perfection and drizzled with balsamic glaze.

Ingredients

Scale
  • 1 small seedless watermelon, cut into 1-inch cubes
  • 8 oz feta cheese, cut into 1-inch cubes
  • 1/4 cup fresh mint leaves
  • Balsamic glaze, for drizzling
  • Salt and pepper, to taste
  • Wooden skewers, soaked in water for 30 minutes

Instructions

  1. Preheat the grill to medium heat.
  2. On each skewer, thread one cube of watermelon, one mint leaf, and one cube of feta cheese. Repeat until the skewer is filled, leaving a little space at the ends for handling.
  3. Season the skewers lightly with salt and pepper.
  4. Place the skewers on the grill and cook for about 2-3 minutes on each side, until grill marks form and the watermelon is slightly softened.
  5. Remove from the grill and drizzle with balsamic glaze before serving.

Notes

  • For a smoky flavor, add a few minutes to the grilling time.
  • Feel free to substitute feta with goat cheese for a different flavor profile.
