These Grilled Watermelon Feta Skewers are a refreshing summer appetizer that combines juicy watermelon with salty feta cheese, grilled to perfection and drizzled with balsamic glaze.

- 1 small seedless watermelon, cut into 1-inch cubes
- 8 oz feta cheese, cut into 1-inch cubes
- 1/4 cup fresh mint leaves
- Balsamic glaze, for drizzling
- Salt and pepper, to taste
- Wooden skewers, soaked in water for 30 minutes
Instructions
- Preheat the grill to medium heat.
- On each skewer, thread one cube of watermelon, one mint leaf, and one cube of feta cheese. Repeat until the skewer is filled, leaving a little space at the ends for handling.
- Season the skewers lightly with salt and pepper.
- Place the skewers on the grill and cook for about 2-3 minutes on each side, until grill marks form and the watermelon is slightly softened.
- Remove from the grill and drizzle with balsamic glaze before serving.
Notes
- For a smoky flavor, add a few minutes to the grilling time.
- Feel free to substitute feta with goat cheese for a different flavor profile.
