- 1 pound large shrimp, peeled and deveined
- 1/4 cup olive oil
- 3 cloves garlic, minced
- 2 tablespoons fresh lemon juice
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Lemon wedges for serving
- Fresh parsley, chopped for garnish
- Skewers (soaked in water if wooden)
Instructions
- In a bowl, whisk together olive oil, garlic, lemon juice, smoked paprika, oregano, salt, and pepper.
- Add the shrimp to the bowl and toss to coat. Marinate for at least 30 minutes.
- Preheat the grill to medium-high heat.
- Thread the marinated shrimp onto the skewers.
- Grill the skewers for 2-3 minutes on each side, or until the shrimp are pink and opaque.
- Remove from the grill and serve with lemon wedges and chopped parsley.
