- 1 ripe pineapple
- 2 tablespoons brown sugar
- 1 teaspoon cinnamon
- 1 tablespoon honey or maple syrup (optional)

Instructions
- Preheat your grill to medium heat.
- Cut the top and bottom off the pineapple, then slice off the skin. Cut the pineapple into 1-inch thick rings or wedges.
- In a small bowl, mix together the brown sugar and cinnamon.
- Brush the pineapple slices with honey or maple syrup if using, then sprinkle the brown sugar mixture evenly over both sides.
- Place the pineapple on the grill and cook for 3-4 minutes on each side, or until grill marks appear and the pineapple is heated through.
- Remove from the grill and let cool slightly. Garnish with fresh mint if desired and serve warm.
