Ingredients

  • 1 block of halloumi cheese, sliced
  • 1 can (15 oz) of chickpeas, drained and rinsed
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 4 cups mixed greens (spinach, arugula, etc.)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 avocado, sliced
  • Juice of 1 lemon
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, toss the chickpeas with olive oil, smoked paprika, garlic powder, salt, and pepper until evenly coated.
  3. Spread the chickpeas on a baking sheet in a single layer and roast for 25-30 minutes, or until crispy and golden brown.
  4. While the chickpeas are roasting, heat a grill pan over medium heat.
  5. Grill the halloumi slices for about 2-3 minutes on each side, or until grill marks appear and the cheese is slightly softened.
  6. In a large bowl, combine mixed greens, cherry tomatoes, cucumber, and avocado.
  7. Once the chickpeas are done roasting, add them to the salad mixture.
  8. Top the salad with grilled halloumi slices and drizzle with lemon juice.
  9. Garnish with fresh herbs if desired and serve immediately.
