Ingredients

  • 4 slices of bread
  • 4 slices cheddar cheese
  • 2 tablespoons butter
  • 2 cans (14.5 oz each) canned diced tomatoes
  • 2 cups vegetable broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • to taste salt
  • to taste pepper
  • 1 teaspoon basil, fresh or dried

Instructions

  1. In a pot, heat olive oil over medium heat. Add chopped onion and sauté until translucent.
  2. Add minced garlic and cook for an additional minute.
  3. Pour in the canned diced tomatoes (with juice) and vegetable broth. Stir in salt, pepper, and basil.
  4. Bring the mixture to a boil, then reduce heat and simmer for 15-20 minutes.
  5. In the meantime, heat a skillet over medium heat. Spread butter on one side of each slice of bread.
  6. Place cheese between two slices of bread, buttered side out.
  7. Grill the sandwiches in the skillet until golden brown and the cheese is melted, about 3-4 minutes per side.
  8. Once the soup has simmered, blend it until smooth using an immersion blender or a regular blender.
  9. Serve the grilled cheese sandwiches hot with a bowl of tomato soup.
