A classic comfort food pairing of crispy grilled cheese sandwiches with a warm, flavorful tomato soup.

- 4 slices of bread
- 4 slices cheddar cheese
- 2 tablespoons butter
- 2 cans (14.5 oz each) canned diced tomatoes
- 2 cups vegetable broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- to taste salt
- to taste pepper
- 1 teaspoon basil, fresh or dried
Instructions
- In a pot, heat olive oil over medium heat. Add chopped onion and sauté until translucent.
- Add minced garlic and cook for an additional minute.
- Pour in the canned diced tomatoes (with juice) and vegetable broth. Stir in salt, pepper, and basil.
- Bring the mixture to a boil, then reduce heat and simmer for 15-20 minutes.
- In the meantime, heat a skillet over medium heat. Spread butter on one side of each slice of bread.
- Place cheese between two slices of bread, buttered side out.
- Grill the sandwiches in the skillet until golden brown and the cheese is melted, about 3-4 minutes per side.
- Once the soup has simmered, blend it until smooth using an immersion blender or a regular blender.
- Serve the grilled cheese sandwiches hot with a bowl of tomato soup.
