Ingredients

  • 1 cup all-purpose flour
  • 1 cup spinach puree
  • 1 tablespoon baking powder
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • Honey for drizzling

Instructions

  1. In a bowl, mix flour, baking powder, sugar, and salt.
  2. In another bowl, combine spinach puree, milk, egg, and melted butter.
  3. Pour wet ingredients into dry ingredients. Mix until just combined.
  4. Heat a non-stick skillet over medium heat.
  5. Pour 1/4 cup batter onto the skillet for each pancake.
  6. Cook until bubbles form, then flip and cook until golden brown.
  7. Serve warm with honey syrup drizzled on top.

Notes

  • Adjust sweetness by adding more or less sugar.
  • Use fresh spinach for best results.
