- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract
- Royal icing for decoration
- Food coloring (various colors for graduation theme)
Instructions
- In a bowl, whisk together flour, baking powder, and salt. Set aside.
- In a large bowl, beat the butter and sugar together until light and fluffy.
- Add the egg, vanilla extract, and almond extract to the butter mixture and mix until combined.
- Gradually add the dry ingredients to the wet ingredients and mix until a dough forms.
- Divide the dough into two discs, wrap in plastic wrap, and refrigerate for at least 1 hour.
- Preheat your oven to 350°F (175°C).
- On a floured surface, roll out one disc of dough to about 1/4 inch thickness.
- Use cookie cutters to cut out shapes (such as caps, diplomas, or stars) and place them on a baking sheet lined with parchment paper.
- Bake for 8-10 minutes or until the edges are lightly golden. Allow to cool completely before decorating.
- Prepare royal icing according to package instructions and divide into bowls for coloring.
- Decorate cooled cookies with royal icing, using colors that represent the graduation theme (school colors, etc.). Allow icing to set completely before serving.
Notes
- For best results, make sure your butter is at room temperature.
