- 2 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 cup unsalted butter, softened
- 1 1/2 cups white sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract (optional)
- 3–4 cups powdered sugar (for icing)
- 2–3 tablespoons milk (for icing)
- Gel food coloring (for decorating)
- Sprinkles (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a small bowl, stir together flour, baking soda, and baking powder. Set aside.
- In a large bowl, cream together the butter and sugar until smooth.
- Beat in the egg, vanilla extract, and almond extract (if using). Gradually blend in the dry ingredients.
- Roll rounded teaspoonfuls of dough into balls, and place onto ungreased cookie sheets. Flatten each ball slightly with the bottom of a glass.
- Bake 8 to 10 minutes in the preheated oven, or until golden. Let cool on wire racks.
- To make the icing, mix powdered sugar and milk until smooth. Add food coloring as desired.
- Decorate cooled cookies with icing and sprinkles to match your graduation theme.
Notes
- For best results, chill the dough for 30 minutes before baking to prevent spreading.
- You can use cookie cutters to create themed shapes such as caps, diplomas, or stars.
- Store cookies in an airtight container for up to one week.
