  • Author: ushinzomr

Description

Celebrate graduation with beautifully decorated cookies that are perfect for the occasion! These sugar cookies are soft, buttery, and topped with colorful royal icing.

Ingredients

Scale
  • 1 cup unsalted butter (softened)
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • as needed royal icing (for decoration)
  • as needed food coloring (for decorating)

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture and mix until a dough forms.
  6. Roll out the dough on a floured surface to about 1/4 inch thick. Use cookie cutters to cut out shapes.
  7. Place the cookies on the prepared baking sheets and bake for 8-10 minutes, or until the edges are lightly golden.
  8. Allow cookies to cool completely on a wire rack.
  9. Decorate the cooled cookies with royal icing using a piping bag. Add food coloring as desired to create graduation-themed designs.

Notes

  • For best results, chill the dough for 30 minutes before rolling it out.
  • Use various food coloring to match the graduation theme or school colors.
