- 2 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 cup unsalted butter, softened
- 1 1/2 cups white sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 3 to 4 cups powdered sugar (for icing)
- Food coloring (in school colors)
- Sprinkles or edible decorations (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a small bowl, stir together flour, baking soda, and baking powder; set aside.
- In a large bowl, cream together the butter and sugar until smooth.
- Beat in the egg, vanilla extract, and almond extract until well blended.
- Gradually blend in the dry ingredients.
- Roll rounded teaspoonfuls of dough into balls, and place onto ungreased cookie sheets. Flatten each ball slightly with the bottom of a glass.
- Bake 8 to 10 minutes in the preheated oven, or until golden. Let cool on wire racks.
- Once cooled, prepare the icing by mixing powdered sugar with a little water to achieve a thick yet spreadable consistency. Divide into bowls and add food coloring to match school colors.
- Decorate cookies with icing and add sprinkles if desired.
Notes
- For graduation-themed shapes, use cookie cutters to shape the dough before baking.
- You can also make cookie sandwiches by adding icing between two cookies.
- Store cookies in an airtight container for up to a week.
