Ingredients

  • 1 cup garlic cloves, peeled
  • 1 cup olive oil
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon salt, divided
  • 1 cup ricotta cheese
  • 1 tablespoon lemon juice
  • 1/4 teaspoon black pepper
  • 4 slices of baguette or your choice of bread
  • Fresh herbs for garnish (optional)

Instructions

  1. In a small saucepan, combine garlic cloves, olive oil, thyme, and 1/2 teaspoon salt. Cook over low heat for about 30 minutes, until the garlic is tender and lightly golden. Remove from heat and let cool in the oil.
  2. In a bowl, combine ricotta cheese, lemon juice, remaining 1/2 teaspoon salt, and black pepper. Use a fork or a hand mixer to whip until smooth and creamy.
  3. Preheat your oven to 400°F (200°C). Arrange the bread slices on a baking sheet and toast them in the oven for about 5-7 minutes, or until golden and crispy.
  4. Spread a generous amount of whipped ricotta on each toast, then top with a few cloves of garlic confit and drizzle some of the garlic-infused oil over the top.
  5. Garnish with fresh herbs if desired, and serve immediately.

Notes

  • Store any leftover garlic confit in a sealed container in the refrigerator for up to two weeks.
  • The garlic confit can be used in other dishes such as pasta, mashed potatoes, or as a spread on sandwiches.
