- 4 boneless, skinless chicken thighs
- 1 cup buttermilk
- 1 cup all-purpose flour
- 1 tablespoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Vegetable oil, for frying
- 4 hamburger buns
- Mayonnaise, for spreading
- Sliced pickles, for topping
Instructions
- In a bowl, combine the buttermilk and chicken thighs. Cover and refrigerate for at least 1 hour, or overnight for best results.
- In another bowl, mix together the flour, paprika, garlic powder, onion powder, salt, and pepper.
- Remove the chicken from the buttermilk, allowing excess to drip off. Dredge each piece in the flour mixture, pressing lightly to adhere.
- In a large skillet, heat about 1 inch of vegetable oil over medium-high heat until it reaches 350°F (175°C).
- Carefully add the chicken thighs to the hot oil, cooking for 5-7 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F/75°C).
- Remove the chicken from the oil and place on a paper towel-lined plate to drain excess oil.
- To assemble the sandwich, spread mayonnaise on the bottom half of each bun. Place a fried chicken thigh on top, add sliced pickles, and then cover with the top half of the bun.
