Description
A classic French onion soup recipe made with caramelized onions, beef broth, and topped with melted cheese and toasted bread.

- 4 tablespoons unsalted butter
- 4 large onions, thinly sliced
- 2 cloves garlic, minced
- 6 cups beef broth
- 1 cup dry white wine
- 2 teaspoons fresh thyme leaves
- 1 bay leaf

- 6 slices French bread, sliced
- 1 1/2 cups Gruyère cheese, shredded
Instructions
- In a large pot, melt the butter over medium heat.
- Add the sliced onions and cook, stirring occasionally, until they are caramelized, about 30 minutes.
- Stir in the minced garlic and cook for another minute.
- Add the beef broth, dry white wine, thyme, and bay leaf. Bring to a simmer and let it cook for 20 minutes.
- Season with salt and black pepper to taste.
- Meanwhile, preheat the oven to 400°F (200°C).
- Place the slices of French bread on a baking sheet and toast in the oven until golden brown.
- Remove the bay leaf from the soup.
- Ladle the soup into oven-safe bowls, placing a slice of toasted bread on top of each bowl. Sprinkle with Gruyère cheese.
- Place the bowls on a baking sheet and broil in the oven until the cheese is melted and bubbly, about 2-3 minutes.
- Serve hot, garnished with fresh thyme if desired.
