  • 4 large onions, thinly sliced
  • 2 cloves garlic, minced
  • 6 cups beef broth
  • 1 cup dry white wine
  • 2 teaspoons fresh thyme leaves
  • 1 bay leaf

  • 6 slices French bread, sliced
  • 1 1/2 cups Gruyère cheese, shredded

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the sliced onions and cook, stirring occasionally, until they are caramelized, about 30 minutes.
  3. Stir in the minced garlic and cook for another minute.
  4. Add the beef broth, dry white wine, thyme, and bay leaf. Bring to a simmer and let it cook for 20 minutes.
  5. Season with salt and black pepper to taste.
  6. Meanwhile, preheat the oven to 400°F (200°C).
  7. Place the slices of French bread on a baking sheet and toast in the oven until golden brown.
  8. Remove the bay leaf from the soup.
  9. Ladle the soup into oven-safe bowls, placing a slice of toasted bread on top of each bowl. Sprinkle with Gruyère cheese.
  10. Place the bowls on a baking sheet and broil in the oven until the cheese is melted and bubbly, about 2-3 minutes.
  11. Serve hot, garnished with fresh thyme if desired.
