Description

These vibrant Firecracker Popsicles are a delicious and refreshing treat that capture the essence of summer. Made with layers of berry and coconut flavors, they are perfect for hot days and celebrations.


Ingredients

  • 1 cup Blueberry Layer
  • 2 tablespoons Sugar
  • 1 cup Coconut Layer
  • 1 cup Strawberry Layer
  • 2 tablespoons Honey or Maple Syrup
  • 1/2 cup Water

Instructions

  1. In a blender, combine blueberries and 2 tablespoons of sugar. Blend until smooth.
  2. Pour the blueberry mixture into popsicle molds, filling them about 1/3 of the way. Insert sticks and freeze for 1-2 hours, or until set.
  3. In another blender, combine coconut milk. Pour the coconut layer over the frozen blueberry layer, filling the molds another 1/3 of the way. Freeze for another 1-2 hours.
  4. In the blender, combine strawberries, honey (or maple syrup), and water. Blend until smooth.
  5. Pour the strawberry mixture over the frozen coconut layer, filling the molds to the top. Insert sticks and freeze for at least 4 hours, or until fully frozen.
  6. To remove the popsicles from the molds, run warm water over the outside of the molds for a few seconds. Gently pull the popsicles out and enjoy!

Notes

  • For a fun twist, try adding layers of different fruits.
  • These popsicles can be stored in the freezer for up to 2 weeks.
