Description
These vibrant Firecracker Popsicles are a delicious and refreshing treat that capture the essence of summer. Made with layers of berry and coconut flavors, they are perfect for hot days and celebrations.

- 1 cup Blueberry Layer
- 2 tablespoons Sugar
- 1 cup Coconut Layer
- 1 cup Strawberry Layer
- 2 tablespoons Honey or Maple Syrup
- 1/2 cup Water
Instructions
- In a blender, combine blueberries and 2 tablespoons of sugar. Blend until smooth.
- Pour the blueberry mixture into popsicle molds, filling them about 1/3 of the way. Insert sticks and freeze for 1-2 hours, or until set.
- In another blender, combine coconut milk. Pour the coconut layer over the frozen blueberry layer, filling the molds another 1/3 of the way. Freeze for another 1-2 hours.
- In the blender, combine strawberries, honey (or maple syrup), and water. Blend until smooth.
- Pour the strawberry mixture over the frozen coconut layer, filling the molds to the top. Insert sticks and freeze for at least 4 hours, or until fully frozen.
- To remove the popsicles from the molds, run warm water over the outside of the molds for a few seconds. Gently pull the popsicles out and enjoy!
Notes
- For a fun twist, try adding layers of different fruits.
- These popsicles can be stored in the freezer for up to 2 weeks.
- Make sure to freeze each layer until set before adding the next layer.
